Sweet Potato Cake

This is an interesting bake from Alex Goh Fruity Cakes. His recipes are always very user friendly, easy and very attainable. No frills with his step by step guide.

This is a light and sweet tasting sweet potato cake. It's rich in beta carotene and makes a good healthy afternoon tea snack!

200g butter
50g sugar

4 egg yolks

100g sweet potato, peeled steamed and mashed

4 egg whites
100g sugar
180g plain flour
1/2 tsp baking powder

60g raw sweet potato, peeled and diced

1 Grease baking pan and preheat oven to 170 deg C
2 Cream A until light and fluffy
3 Add B and continue whipping till light and smooth then add C and cream till well blended
4 Whip the egg whits in D until foamy then add sugar and continue whipping till stiff
5 Mix the meringue with the batter from step 3 till well incorporated
6 Pour 1/3 of the batter in the pan and drop some diced sweet potato and place remaining batter over it
7 Bake for 40 min till golden brown

Same as u, I also like Alex Goh's book. So far I have tried pumpkin cake and pecan raisin cake(I modified into mixed fruit cake) in this book, thumb up for his recipes!

Sweet potato in a cake! I've never heard of that but it sure looks and sounds delicious!

The sweet potatoes are mashed in it and there are also chunks in it.. u shuld try :)
