This is a light and sweet tasting sweet potato cake. It's rich in beta carotene and makes a good healthy afternoon tea snack!
4 egg yolks
100g sweet potato, peeled steamed and mashed
4 egg whites
180g plain flour
1/2 tsp baking powder
60g raw sweet potato, peeled and diced
1 Grease baking pan and preheat oven to 170 deg C
2 Cream A until light and fluffy
3 Add B and continue whipping till light and smooth then add C and cream till well blended
4 Whip the egg whits in D until foamy then add sugar and continue whipping till stiff
5 Mix the meringue with the batter from step 3 till well incorporated
6 Pour 1/3 of the batter in the pan and drop some diced sweet potato and place remaining batter over it
7 Bake for 40 min till golden brown
